Delicious recipe: Oreo cookie cake

Oreo cookie cake is by far one of my favorite recipes.  It combines the taste of rich chocolate-y cookies with light vanilla cake.  It is perfect for both dessert after dinner, as well as breakfast or really any snack.

Ingredients:

For this recipe, there are two parts – the cake and the cookie mixture.

Cake:

  • 1 cup oil
  • 4 large eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt (optional)
  • 1/4 cup orange juice
  • 1 tablespoon vanilla

Cookie mixture:

  • 24 Oreo cookies
  • 1/3 cup flour
  • 1/4 cup margarine, melted
  • 1/3 mini (or normal sized) semi-sweet chocolate chips

In order to prepare the cake, follow these instructions:

1. Add eggs and oil in a large bowl, beat at a medium speed

2. Add sugar slowly, beat well

3. In a separate smaller bowl, mix flour, baking powder and (optional) salt

4. Add the contents of the smaller bowl into the larger bowl and beat until well blended

5. Add orange juice and vanilla into the larger bowl

To prepare the cookie mixture, do the following in a medium sized bowl:

1. Crush or chop Oreos into small pieces

2. Add melted margarine and mix

3. Add chocolate chips and mix well

Now, finally, it is time to prepare the actual cake:

1. Spray or oil a bundt cake pan VERY well (if you forget this step, the cake will be stuck in the pan)

2. Pour in about half of the cake batter

3. Sprinkle about 2 cups of the cookie mixture on top of the batter that is in the bundt pan

4. Pour in the rest of the cake mix

5. Add the rest of the cookie mixture onto the cake mix in the pan and press it gently into the batter

Place the cake in the oven at 350 degrees.  The amount of time you bake this cake for depends on you.  It is technically supposed to be a more dry coffee cake, however I like a more moist cake.  If you like a moist cake, bake for about 1 hour.  If you like a more dry cake, bake up to 1 hour and 15 minutes.

I almost forgot the best part – the glaze!

To make the glaze, add 1 cup of powdered sugar to 4 teaspoons of milk and mix well.  Pour the glaze over the top of the cake when it comes out of the pan and let it drip down.
